Tropical Smoothie

Every winter while the snow piles up around me and the temperatures drops below zero, I daydream about running away to a tropical location. Give me beaches, warm air, ocean breezes.

Sigh. Sounds wonderful, doesn’t it?

Unfortunately, thanks to school and work, spending the winter where it’s warm is never an option. So, I just have to make do with what I have.

I can’t experience the tropics in its entirety, but I can experience it bit by bit through my senses.

Sometimes with my eyes, sometimes with my ears, and this time with my taste buds.

This yummy Tropical Smoothie definitely tasted like I should be sitting at the beach with a warm breeze blowing through my hair. Good-bye winter, hello tropics!

The idea for these smoothies started when we were working on our creations for Project:Around the World – The Bahamas.

The cold winter outside was making the girls and I wish we could hop a plane.

We read about the beaches, the weather, and the markets and we had music from The Bahamas playing in the background.

If we closed our eyes, we could pretend we were there.

We were only missing one thing – something cool and refreshing that tasted like a day in the sun.

How to make your Tropical Smoothie

Since we were learning about The Bahamas, I wanted to make a smoothie inspired by all that we learned.

All the fruit that we used are grown in The Bahamas – pineapple, mango, bananas, and coconut (milk).

We added a touch of orange juice, blended it together, and enjoyed our Tropical Smoothies.

This dairy-free and delicious Tropical Smoothie will whisk you away to the beach. Enjoy it anytime you want a cold and refreshing treat.

To make a good smoothie, you need some frozen ingredients. I cut up a mango, a banana, and opened a can of pineapple. I would have preferred a fresh pineapple, but you can’t always find good ones in Minnesota in the middle of winter.

Then, I placed wax paper on a sheet pan, spread out the fruit and then popped it in the freezer for awhile. I froze way more than we needed for one smoothie.

Once your fruit is frozen, you can pop it all in a plastic freezer bag so it takes up less room in your freezer.

If you do want to make things easier on yourself, check the frozen fruit section of the grocery store. I was able to find a bag of frozen pineapple and mango chunks for our next round of smoothies.

It’s time to make smoothies! Once you’ve got frozen fruit, it’s really easy to whip up a batch of tropical smoothies.

Grab your blender (we have this one – it’s fab!), throw in your ingredients, blend until smooth, and enjoy.

Save this recipe. You’ll love it!

Tropical Smoothie
Make 1 smoothie

1/2 c. frozen pineapple and mango pieces
1/2 banana, cut into pieces
1/2 c. coconut milk
1/2 c. orange juice

Put all ingredients in the blender. Blend until smooth. Pour into glass and enjoy.

Note: I tried this smoothie using both frozen banana pieces and a banana straight from the fruit bowl. Either way works. If your banana is not frozen, you may need to add a couple of ice cubes before blending to get a good consistency.

Beat the Heat With Frozen Treats

Yogurt isn’t just for breakfast! Yoplait® recently asked me to go beyond breakfast time, which was an easy task for us. We’ve been enjoying yogurt as a snack quite often. Now that we’re deep in the middle of summer, we’ve added a twist to cool us off – frozen yogurt.
You can make frozen yogurt treats as easy or as complicated as you like. Check out some of our ideas below.
Frozen snack idea #1: Stick your GoGurt in the freezer!
 
Seriously friends, it doesn’t get any easier than this. GoGurts are the perfect size for snacking and they’re already in a popsicle-friendly form. You don’t need to prep these in any way. Just pop them in the freezer after you get them home from the store. When you’re ready to snack, cut off the top, squeeze it up, and enjoy! Even my daughter who doesn’t care much for yogurt loved frozen GoGurts.

Peaches and Cream Popsicles

Popsicles are one of our favorite summer treats. They’re cool, refreshing, and delicious. When our sponsor Yoplait® asked me to create a recipe using Yoplait® yogurts, I knew right away that we were going to make popsicles. And, boy were they yummy!
We took a classic flavor combination – peaches and cream – and added a frozen twist. Get ready to try some yummy Peaches and Cream Yogurt Popsicles.
Peaches and Cream Popsicles
Makes 6 popsicles
 
Ingredients
1 peach
2 6oz. containers Yoplait Original Harvest Peach yogurt
1 6oz. container Yoplait Original French Vanilla yogurt
First, peel and dice one peach into small pieces. Next, empty 2 containers of Harvest Peach yogurt into a bowl. Add the diced peach and mix thoroughly. Fill the bottom 1/3 of your popsicle molds with half of the peach and yogurt mixture. Fill the next 1/3 of your molds with French Vanilla yogurt. Finally, add the other half of the peach yogurt mixture to your molds.
After the molds are full take a knife and mix up your yogurts to make a swirl pattern. Insert the knife and move it up and down 3 to 4 times in each mold. Don’t mix too much as you still want to keep your 2 flavors separate.
Insert sticks and place in the freezer. Freeze until solid.

 

These popsicles are so easy and make a great wholesome summer snack. I can’t think of a better way to cool down on a summer afternoon.

I’ve got a simple candy corn snack mix for you today that I’ve paired up with some of our favorite Halloween books.

I combined the candy corn with some healthier ingredients so you can indulge without the guilt.

I’ve been eating handfuls of this stuff lately… I may have to make another batch!

Candy Corn Snack Mix

1 c. Honey Nut Cheerios
1/2 c. candy corn
1/2 c. raisins
1/2 c. salted and shelled pumpkin seeds

Salted peanuts, pecans, or dried cranberries would make good substitutions for any of the above ingredients. They’d also make great additions to the ingredients you’ve got. The more the merrier when it comes to snack mix. (I just didn’t add them here because my kids won’t eat nuts.)

Toss all your ingredients in bowl and mix. Store in an airtight container. Grab a handful when you need a snack. It’s a bit addicting!

Just a note on the ingredients: If you want to keep the price down, look for your ingredients in the bulk food section of the store. I bought both the candy corn and the pumpkin seeds that way, only buying the amount I needed. It makes a huge difference in price.

Learning to Make Healthy Choices

Do you struggle with making healthy choices about what you eat? I know I do and you can bet my kids do too. That plate of cookies always looks much better than the veggie tray, doesn’t it?
We all try out best to feed our kids well. We give them a healthy breakfast, pack healthy lunches and make sure to always serve vegetables. We can definitely control what we feed out kids. But, as our kids get older, they will be making more and more of these choices of their own. So, not only do we need to feed them well, but we need to teach them to make their own healthy choices.

One way to teach them make healthy choices is to make them aware of what they are eating.

“Did you choose blueberries for a snack? Great! You made an excellent choice! ”

“Since you already had a cookie today, why don’t we have something healthier for a snack. A sliced apple would be a better choice.”

Help them choose healthier options. Talk them through the process. Show them that you notice the good choices they are making.

To make those choices easier, I’ve made a fun printable for you. You can download Today’s Healthy Choice at this link. Print out as many as you like. You kids can use this sheet to record their healthy choices. It may be a choice they made or it may just be an acknowledgment of the healthy food they had for dinner. They don’t even have to record every single healthy thing they ate each day. The point is to get them thinking about the healthy choices they make. And, if they have a place to record it they will start remembering the good choices they make.

At the end of the week, look back together and talk about their healthy choices. Help them pinpoint those times they did well. Show them that it really is easy (and yummy) to choose healthy. If they learn to look at their choices with a discerning eye, they will be better equipped to make those healthy choices again and again.
